St. Patrick’s day is March 17th, so in preparation here are some fun recipes inspired by the green holiday that you can make at home!

 

St. Patrick’s Day Chocolate Covered Oreos

For this recipe, you’re going to need:

4 ounces of green confectioner’s green coating, like green candy melts

One package of Oreo cookies

1 Tablespoon of green and white sprinkles

 

Step one: Put the green confectioner’s green candy melts in the microwave for a minute to a minute and a half, until completely melted. Keep stirring constantly, in between melting in the microwave.

Next: Dip the cookies 2/3 way into the melted candy, and place them on wax paper

Then: Get a pinch of sprinkles and drizzle them over the cookies before the candy dries onto the cookies. Put the cookies in the fridge before serving!

 

Mint Chocolate Chip Cookies

Ingredients:

1/2 cup of butter, softened

1 cup of sugar

1 egg

1/2 cup of plain yogurt

1 small box of instant vanilla pudding mix

1/2 teaspoon of salt

1/2 teaspoon baking soda

2 cups of all-purpose flour

2 teaspoons of vanilla extract

3 drops of blue food coloring + 10 drops of green food coloring

1 1/2 cups of chocolate chips

 

Let’s get to baking!

Step one:  Cream together butter and sugar. Add in the egg, yogurt, and pudding mix.

Step two: In a small bowl combine flour, salt, and baking soda.

Step three: Incorporate flour mixture into the pudding mixture and mix until well combined.  Add mint extract and food coloring until your desired color is achieved.

Step four: Add in your chocolate chips.

Step five: Scoop cookie dough onto a greased baking sheet in your desired size.

Bake at 375 degrees for around 10 minutes. Place them onto a cooling rack and enjoy!

 

 

Four Leaf Clover Rice Crispy Treats

For this tasty treat you will need:

3 tablespoons of butter

4 cups of large marshmallows

1/4 teaspoon of peppermint extract

6 cups of crisp rice cereal (or rice crispies)

6 ounces of white candy coating, chopped

4 drops of green food coloring (this is optional)

Green sprinkles

 

Step one: In a large saucepan, melt your butter. Add in the marshmallows and cook while stirring over low heat until melted. Remove from the heat and stir in the peppermint extract and rice crispies cereal. Press mixture into a greased foil-lined pan of your desired size. Cool completely on a rack.

Step two: Once cooled, place the rice crispies onto a cutting board and remove the foil. Cut into clover shapes with a shamrock cookie cutter.

Step three: In a microwave, melt candy coating for 1 minute. Microwave in additional 10-20 second intervals, stirring in-between.

Step four: If desired, stir in food coloring into melted candy. Drizzle the candy coating over the treats and decorate with sprinkles. Enjoy!
