If you’re anything like me, you like the idea of baking around the holidays, but every recipe you see just seems too complicated. This holiday cookie sandwich recipe is super quick, delicious, and doesn’t require spending hours in the kitchen. Enjoy!!
Holiday Chocolate Chip Cookie Sandwiches
Cookies Ingredients:
2 ¼ cups of flour
1 teaspoon baking soda
1 ½ teaspoons of salt
2 sticks of butter
¾ cup of sugar
¾ cup of brown sugar
1 teaspoon vanilla extract
2 eggs
1 ½ cups of chocolate chips
½ cup red and green M&M’s
Frosting Ingredients:
2 cups of powdered sugar
1 stick of butter
2 tablespoons of milk
1 ½ teaspoons of vanilla
Directions:
Cookies:
Stir the baking soda, salt and flour together in one bowl. In another bowl, mix the butter sugar, vanilla, brown sugar, and eggs. Add the flour mix to the butter and sugar mix and stir until everything is mixed completely. Add the chocolate chips and M&M’s to the dough. Scoop onto a cookie sheet and bake for 10 minutes total.
*Tip: 8 minutes into baking the cookies, take them out and sprinkle salt and a few extra M&M’s on the top of each one, then bake for 2 more minutes.
Frosting:
Mix the butter and powdered sugar together first until blended completely, then add milk and vanilla. Stir until it has a thicker consistency.
Once the cookies are completely cooled, spread a teaspoon of icing in between two cookies, then press the cookies together to make them into sandwiches.
